01 The challenge

El Redebal Bistro had been filling its dining room in the centre of Segovia for years —4.6★ with over 2,700 reviews— but its digital operation was split across three suppliers: an ageing WordPress site that needed a third party every time a dish changed, a paid booking platform with a three-figure monthly fee, and a third-party booking portal that kept the diner's data. Three invoices, three dashboards, and nowhere the restaurant actually owned its own customers.

02 Our solution

Bouzon Digital brought website, menu and bookings into a single account. A bilingual ES/EN website built on their real brand and deployed on their own domain, with the full menu —23 dishes with prices, the Menú Casual, six group menus, biodynamic wines and the cellar list— editable by the restaurant itself from the dashboard. The booking system replaced the paid platform: real-time direct bookings over their real floor plan (33 tables and 128 covers across dining room, bar and terrace) and their seven real service windows, with 0% commission per cover and ownership of the diner's data. Professional email on their own domain included.

El Redebal Bistro sits on Plaza de la Alhóndiga, in the heart of Segovia's old town, and has spent years doing the hard part: filling the room, consistently. Its Google listing carries 4.6★ with over 2,700 reviews. The product was never the problem.

The challenge: three suppliers for one house

The digital operation was scattered. The website was an ageing WordPress install that needed a third party every time a dish or a price changed, so the published menu never quite matched the real one. Bookings arrived through a paid booking platform on a three-figure monthly fee, and through a third-party portal that kept the diner's data. The domain's email lived somewhere else again.

It's the pattern in almost every restaurant with a few years behind it: nobody decided on it, it just accumulated. The cost isn't only the sum of the invoices — it's that the restaurant doesn't own its own customers.

We designed the site from scratch around their real brand —a burgundy calligraphic wordmark on cream, Newsreader and Archivo type— with full light/dark mode and an ES/EN mirror from day one, which in a city with Segovia's volume of international visitors is not an extra. The menu is set on screen the way a printed menu is set.

The menu, edited by the restaurant

Their full menu —23 dishes with prices, the Menú Casual, the six group menus, the biodynamic wines and the cellar list— lives in Bouzon Digital's web menu module: the restaurant edits it from the dashboard, in Spanish and English, without calling anyone and without waiting for someone to find a moment.

Bouzon Digital bookings — direct, €0 per cover

Bouzon Digital's booking system replaced the paid platform. The engine works on the real floor plan —33 tables and 128 covers across dining room, bar and terrace— and on their seven real service windows, Wednesday to Sunday, with the hours the restaurant actually keeps. The diner books in real time and gets instant confirmation; the restaurant manages shifts, tables and capacity, and owns its customers' data, with no commission per cover and without handing it to a third party. And the email, on their own domain

The restaurant's email (info@ plus a bookings alias) was migrated to the new domain without downtime, so website, menu, bookings and email are all run from a single Bouzon Digital account.

Beyond the Costa del Sol

El Redebal Bistro is our first client in Castilla y León, and the first to complete sign-up entirely on their own, end to end, with no meeting in between: they picked the modules, paid, and their account was provisioned. The software is the same in Segovia as in Benalmádena, and so is the support.
