Digital restaurant management in Cómpeta: Moscatel wine, the Harvest Festival and wine-tourism groups

Cómpeta climbs to 636 metres on the southern slope of the Sierra de Almijara. Access from the coast is via the MA-137 from Vélez-Málaga: sixteen kilometres of bends that take a good half hour to climb from Torre del Mar. Tour groups and wine-tourism enthusiasts make that journey in advance and with a booking already made, because you don’t pass through Cómpeta. You go there on purpose.

The draw is twofold: the wineries — Almijara, Cómpeta Natural, Los Trianeros, La Espiga del Mago — and the white village with its whitewashed historic centre. The Harvest Festival, held the first weekend of August, concentrates both into a single day and turns the village into the busiest meeting point in the district at the height of summer.

Bouzon Digital is based in Benalmádena, an hour and ten minutes from Cómpeta on the A-7 and the MA-137. The type of hospitality problem is similar to other white villages in the Axarquía: a short, concentrated peak, WiFi that doesn’t reach the terraces of the historic centre, and an ingredient cost that shifts with the harvest.

The Harvest Festival and managing the peak

Cómpeta’s Harvest Festival isn’t a multi-day fair. It’s a single day — the Sunday of the first weekend of August — on which the village receives thousands of visitors coming from Nerja, the Costa del Sol and Málaga city. Access is by mountain road, parking is limited and tour groups arrive by coach or with transfers already booked. That means most people know which restaurant they’re going to before they leave home.

Bouzon Bookings lives on the restaurant’s website. The organiser of a wine-tourism group visiting Cómpeta in August can book a table for twelve directly, in Spanish or English as appropriate, with an automatic per-person deposit for groups above the threshold the owner sets. The deposit goes straight to the restaurant’s Stripe account, with no platform commission. If the group doesn’t show up, the restaurant loses neither the table nor the money.

QR Pay closes a table in under two minutes. The customer scans the code on the ticket, pays by card or phone, and the table frees up. On Harvest Festival day, with the venue’s terrace at full capacity and people waiting for a table in the street, the difference between two minutes and fifteen to settle the bill determines whether the venue can turn one sitting or two at lunchtime.

White walls and WiFi that doesn’t reach

Cómpeta’s historic centre is part of the traditional fabric of the Axarquía’s white villages. The streets are narrow, the walls are stone and lime, and the network infrastructure hasn’t grown at the same pace as tourism. On festival day, with hundreds of visitors connected to the same local access point, WiFi collapses on any outdoor terrace.

The solution is Bluetooth SPP (Serial Port Profile): the order travels from the waiter’s device straight to the kitchen printer without going through the router. The connection is point-to-point and doesn’t depend on the state of the local network. Verifactu signs tickets directly over the waiter’s mobile data connection. The same walls that block WiFi don’t affect either route.

Moscatel, the harvest and the recipe costing

Cómpeta is the most representative sub-zone of Moscatel de Alejandría in the Axarquía. The vines grow on terraces at between 400 and 700 metres of altitude, in slate soil that gives the wine its mineral character. Wineries within the municipality produce sweet, dry and off-dry Moscatel; the village’s restaurants work this grape into the house wine, into desserts and into traditional dishes such as kid goat in Moscatel sauce.

The problem is that the grape price varies with every harvest: a drought year can push the price of Moscatel up fifty per cent on the year before. A restaurant that has priced its glass of Moscatel, or a dish with a Moscatel reduction, based on the previous harvest’s cost is quietly losing margin.

Bouzon Stock & Recetas wires the recipe costing to the POS: when the cost of the grape or the wine is updated, the system automatically recalculates the real margin on every dish and glass that uses it. Axarquía milk-fed kid goat — which can rise from seven euros a kilo in low season to twelve in August — behaves the same way: the owner sees the dish’s real margin before the service closes, not at the end of the month.

Wine-tourism groups and foreign residents

The Axarquía’s Moscatel route combines a winery visit with lunch or dinner in the village. Groups organising this itinerary — ten, fifteen, twenty people with a guide included — book weeks in advance and expect written confirmation. Many come from the Axarquía’s resident foreign community — mainly British, but also German and Dutch — or are international tourists staying in Nerja or elsewhere on the Costa del Sol.

Bouzon Bookings issues the confirmation in English automatically if the form is filled in in that language. The per-person deposit is held in Stripe until the day of service. The group’s data stays in the restaurant’s database: visit history, preferences, contact email. If that group comes back next year for the Harvest Festival, the restaurant already knows them.

The bilingual digital menu on Bouzon TPV — accessible from the table QR code in the customer’s browser language — removes the Spanish-only menu barrier for international tourists. The waiter doesn’t need to translate the menu: the customer reads it in their own language and, if the restaurant has self-service QR ordering enabled, can order directly from their phone.

Verifactu 2027 in the villages of the inland Axarquía

Cómpeta’s hospitality sector has a high concentration of family businesses run as autónomos: long-standing tapas bars, traditional restaurants, terraces in the historic centre that have run on the same till for decades. For all of them, the Verifactu deadline is the same: January 2027 for companies and July 2027 for the self-employed.

The recommended migration window for a village with a concentrated season like Cómpeta is autumn 2026. After the Harvest Festival and August, the workflow returns to its usual calm, making it the quietest time to install the new system, configure it and train staff without service pressure.

Bouzon TPV runs on whatever device the venue already has: the computer behind the bar, a tablet, a phone. No proprietary hardware and no lock-in required. From Benalmádena, the initial setup can be done in person for any Cómpeta client on the same day.

Frequently asked questions

Does the POS work on Cómpeta’s historic-centre terraces when WiFi is saturated during the Harvest Festival? Yes. Bouzon TPV uses Bluetooth SPP to send orders to the kitchen printer directly from the waiter’s device, without going through the router. On Harvest Festival day, with hundreds of visitors connected to the same local access point, the printing route keeps working. Verifactu signs tickets over the mobile’s data connection too, also without local WiFi.

Can I manage wine-tourism group bookings with an upfront deposit? Yes. Bouzon Bookings lets you set an automatic per-person deposit for groups above a number you decide (typically from six or eight people). The payment goes straight to your Stripe Connect account with no platform commission. The confirmation arrives in English automatically if the form is filled in in that language. The group’s data stays in your database, not any external platform’s.

Does the Stock & Recetas costing work with Cómpeta Moscatel and Axarquía milk-fed kid goat? Yes. You can set the cost of each ingredient — the local Moscatel whose price shifts with the harvest, the kid goat that rises in August — and the system instantly recalculates the real margin on every dish and glass that uses them. If the winery raises the wine price by twenty per cent on the year before, you know before the service ends which dishes have lost margin, without waiting for the monthly close.

Does the digital menu work in English for international tourists visiting the wineries? Yes. The Bouzon TPV digital menu detects the customer’s browser language and shows dish names in Spanish or English as appropriate. If the restaurant has QR self-service enabled, an international group can order directly from their phone without the waiter needing to explain or translate the menu.

When does Verifactu come into force for bars and restaurants in Cómpeta? For companies (SL, SA), the obligation starts in January 2027. For the self-employed, July 2027. The recommended window for migrating in Cómpeta — where high season concentrates around the August Harvest Festival — is autumn 2026, when the village’s pace returns to normal.

Can you do the installation in person in Cómpeta? Yes. Bouzon Digital is based in Benalmádena, an hour and ten minutes from Cómpeta on the A-7 and the MA-137. Initial setup, staff training and any technical issue are handled in person the same day for any venue in the village.

Other municipalities in the inland Axarquía

The inland Axarquía isn’t a single market: each mountain village mixes inland tourists, Moscatel wine-tourism groups and the expat community that lives there year-round in a different way. If your venue is elsewhere in the comarca, these guides go into the detail of each zone:

In every case the system is the same — website with commission-free bookings, cloud POS with Verifactu and real-time recipe costing — and installation is done in person from Benalmádena.
